This fun recipe for Apple Pie Overnight Oats from Chef Jessica Randhawa is an easy, healthy and delicious twist on an old favorite. Simply pull together the ingredients in five minutes and refrigerate overnight. Add your favorite toppings when you wake up, serve and enjoy!  The chia seeds are a nice addition to this recipe; not only do they provide nutrients such as omega-3 and fiber, they are also gluten-free nut-free, low-carb and non-GMO, so they work with most, no matter what your dietary restrictions. In addition, chia seeds are flavor neutral, so you can add them to just about any food without worry that it might upset the flavor of the dish.

Ingredients

    • 1cup old fashioned oats
    • 1cup milk of choice
    • ¼ cup plain yogurt
    • ½ cup applesauce
    • 2 tablespoon Chia Seeds
    • 1teaspoon honey or maple syrup
    • ¼ teaspoon ground cinnamon

Toppings (optional):

  • Slivered almonds
  • Sliced Apple
  • Ground Cinnamon

Instructions

  1. Place oats, milk, yogurt, apple sauce, chia seeds, honey, and cinnamon in equal amounts in two (2) 16 oz mason jars 
  2. Stir, shake, mix and cover with a lid and place in the refrigerator overnight.  
  3. Optional – top with almonds, cinnamon, and chopped apple before serving.
  4. Enjoy!
