Artichoke Caprese Platter Recipe
If you love a traditional caprese salad, you will really enjoy this platter that adds artichoke hearts to the mix! Simple to make and beautiful to look at, this delicious salad makes any meal seem special. It’s important to use fresh mozzarella cheese for the most flavorful results!
2 Jars (7 1/2 ouces each) Marinated artichoke hearts
2 Tbsp Red Wine Vinegar
6 Plum tomatoes, sliced
1 Pound fresh mozzarella cheese, sliced
Fresh basil leaves (approximately 1 1/2 cups loosely packed)
Ground pepper (freshly ground)
Drain artichoke hearts, reserving 3/8 cup of the marinade.
Whisk vinegar, oil and reserved marinade in a small bowl.
Arrange Artichoke Caprese Platter, tomatos, mozzarella cheese and basil leaves on a serving platter. Drizzle with vinaigrette and sprinkle with freshly ground pepper.
(Note: You can play with the amounts of the ingredients, and add more or less of each depending on what you like best!)
