This delicious baked cod recipe takes 5 minutes to prepare, and once you add ten minutes cook time, you are all in for a healthy dinner in just fifteen minutes! with only 5 ingredients, the end result is a baking pan full of moist and juicy cod fillets. As cod fillets have a very mild flavor, you only need a few ingredients for tasty results. An added benefit: cod is low in fat and high in lean protein. It’s also loaded with vitamin B-12, B3 (Niacin) and B6. Simple and healthy, this recipe is great for busy week nights!

Easy Baked Cod Recipe


  • 1 lb cod fillets, rinsed and patted dry (fresh is better, but frozen works too)
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice (fresh squeezed is best)
  • 3 dashes cayenne pepper
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon chopped parsley (for garnish)


Preheat oven to 400F.

Arrange the cod fillets in glass baking dish. Drizzle the oil onto the fish, then follow with the lemon juice. Add salt and cayenne pepper.

Bake the fish in the oven for 10 – 12 minutes, depending on the thickness of the fillets. Do not overcook or the fish will be rubbery.

Garnish with parsley if you like and serve immediately. Enjoy! 

Tip: Add lemon slices and cherry tomatoes before cooking for a fancier garnish if you like!
