This recipe for Spinach Artichoke dip is simple with only four ingredients (plus the bread and/or crackers)! It’s usually inhaled by guests within the first few minutes of a party when I put it out, that’s how delicious it is. Everybody loves it!

1 cup mayonnaise (I use light mayonnaise to save on calories)
1 10 oz package frozen spinach, thawed and drained (squeeze excess water out of the spinach by hand)
1 cup shredded parmesan cheese (Don’t use the dry stuff that sits in your pantry and doesn’t need refrigeration – you can tell the difference!)
1 can artichoke hearts, drained and cut into small pieces.

Preheat oven to 350 degrees F. Mix all ingredients in a bowl. Spread in an oven proof dish (not too large, somewhere around 8 x10 inches). Bake for 20-25 minutes until it starts to bubble on top.

Serve with your favorite bread or crackers. I particularly like using rye or pumpernickel squares, or bagel bites.

Extra Tips from 50PlusToday:

If you want to look fancy, hollow out a loaf of bread, a circle or oval shape works best, leaving at least a layer of bread at the bottom that’s about an inch. Cut the bread you removed into squares to serve with the dip. Spoon the warm artichoke spinach dip into the hollowed out bread bowl, surround with bread and chips and enjoy!

Note: Hate spinach? Leave it out – it’s still delicious!
