1 Tbsp butter
2 lbs (approximately 3 cups) fresh butternut squash, 1/2 inch cubed
2-3 cups feta cheese
3-5 10″ tortillas or 6-8 5.5″ (flour or corn, your choice)
2-3 tbsp vegetable oil(amounts of each ingredient will vary depending on personal taste)
Preheat oven to 400 degrees.
Melt the butter in a pan and add the sliced onion to carmelize (add more butter if you like).
Sprinkle a little olive oil over the butternut squash and roast in a 400 degree oven until cooked through, 25-30 minutes.
Assemble the quesadillas! Layer first the feta cheese (you can use shredded mozzarella if you prefer – the feta gives it a more unique flavor), then the onions, and lastly the butternut squash. Finish with a little more cheese for folding over (or adding another tortilla on top if using small tortillas.
Place folded quesadillas on a baking tray (spray pan with cooking spray first) and drizzle with a little olive oil. Put another baking tray on top and push down. Bake with the tray on top for 5 mins, take the tray off and bake for a further 5 mins until golden (still in a 400 degree oven)
Tips: Sometimes we add black beans and/or fresh spinach to the layers. You decide-Can’t go wrong with these great little treats!
Another note, you can use frozen squash if you don’t have fresh.
