Easy Chopped Greek Tomato, Cucumber and Feta Salad

right and satisfying, this healthy and easy salad comes together in 10 minutes tops. Sure to be a crowd-pleaser

INGREDIENTS

SALAD

large cucumber, chopped
15 grape tomatoes halved
can chickpeas, drained and rinsed
1/2 red onion, chopped
1 red or yellow pepper (or 1/2 of each for extra color!)
1/3 cup Kalamata olives
1/2 lemon
1/2 cup feta, crumbled

2 Tbsp chopped fresh cilantro
(add feta and cilantro after dressing)

DRESSING

1/4 c. extra-virgin olive oil
2 tbsp. red wine vinegar
kosher salt
Freshly ground black pepper
DIRECTIONS
  1. In a large bowl, combine cucumber, tomato, chickpeas, onion, pepper and olives
  2. For the dressing: In a small bowl, whisk together oil and vinegar and season with salt and pepper. Add to large bowl of vegetables, squeeze some fresh lemon juice over salad and toss to combine
  3. Top with feta and cilantro
