When I’m in the mood for smoked salmon, but don’t want the bagel, these hand-held salads are perfect…for brunch, lunch, dinner, snacks, whenever! These elegant little pinwheels, packed with texture and flavor, make wonderful appetizers for a party too. What’s even better, they are easy to make and you can prepare them up to three days in advance! They take almost no time to make, but keep in mind they need to be chilled for at least an hour before you slice to make sure they retain their round shape. SERVINGS :12 SLICES PREP TIME: 15 MINS CHILL TIME: 1 HOUR INGREDIENTS 2 tablespoons Organic Sesame Seeds 8 ounces thinly sliced cold smoked salmon 1/2 cup whipped cream cheese 2 tablespoons chives, minced (substitute chopped red onions if you prefer) 1 tablespoon lemon zest 1/2 medium cucumber, julienne (cut into matchsticks) 1/2 large avocado, sliced 1/2 lemon, sliced thin (garnish) 2 tablespoons capers, drained (OPTIONAL) Tamari Gluten Free Soy Sauce (OPTIONAL) Julienne cut cucumbers INSTRUCTIONS Mix the cream cheese with the chives and lemon zest. Lay a large piece of plastic wrap on a work surface and sprinkle with sesame seeds. Place salmon (8 Ounces) slices over the sesame seeds, overlapping the slices to form a 10 x 6″ rectangle. Spread the whipped cream cheese mixture over the salmon gently, trying not to dislodge any of the pieces. Lay the cucumber pieces and sliced avocado along one side of the rectangle about 1/2 inch from the edge. Roll the smoked salmon tightly using the plastic wrap to help with the rolling Place the roll in the refrigerator for at least one hour (or freezer for 10 minutes) to set. With a sharp knife, cut the roll into 1/2 inch thick slices. Arrange on a plate and garnish with lemon slices. Serve with tamari sauce if desired.
