KETO SMOKED SALMON ROLL-UPS

keto smoked salmon

Why do we love these low carb roll-ups? So many reasons. When I’m in the mood for smoked salmon, but don’t want the bagel, these hand-held salads are perfect…for brunch, lunch, dinner, snacks, whenever! These elegant little pinwheels, packed with texture and flavor, make wonderful appetizers for a party too. What’s even better, they are easy to make and you can prepare them up to three days in advance! They take almost no time to make, but keep in mind they need to be chilled for at least an hour before you slice to make sure they retain their round shape.

INSTRUCTIONS

Mix the cream cheese with the chives and lemon zest.
Lay a large piece of plastic wrap on a work surface and sprinkle with sesame seeds.
Place salmon (8 Ounces) slices over the sesame seeds, overlapping the slices to form a 10 x 6″ rectangle.
Spread the whipped cream cheese mixture over the salmon gently, trying not to dislodge any of the pieces.
Lay the cucumber pieces and sliced avocado along one side of the rectangle about 1/2 inch from the edge.
Roll the smoked salmon tightly using the plastic wrap to help with the rolling
Place the roll in the refrigerator for at least one hour (or freezer for 10 minutes) to set.
With a sharp knife, cut the roll into 1/2 inch thick slices.
Arrange on a plate and garnish with lemon slices.
Serve with tamari sauce if desired.
TIPS: It’s OK if you don’t have whipped cream cheese, but you might want to whip the softened cheese with a mixer when you add the chives and lemon zest. Also, low fat cream cheese works well in this recipe if you prefer.
