This flavorful recipe is easily made from easy to find staples. Common ingredients create a unique and flavorful Moroccan meal. Love this unique dish!
INGREDIENTS
2 Tbsp extra virgin olive oil
1 red onion, diced
2 Tbsp minced garlic
1 tsp ground cumin (don’t leave out the cumin…need it for the unique flavor)
2 cans chickpeas, drained and rinsed
1 can diced tomatoes
1/2 tsp dried thyme (or 2 sprigs fresh if you have it)
2 tsp honey
2 tsp lemon juice
1 3/4 cup chicken broth (or vegetable broth for vegetarians)
1/2 cup flat leaf parsley
salt and pepper to taste
SERVING SUGGESTION: SERVE OVER COUSCOUS (make according to package directions)
DIRECTIONS
Heat oil in saucepan over medium-low heat. Add the onion and garlic, stirring for 5 minutes. Sprinkle with cumin and stir some more.
Stir in chickpeas, tomatoes, thyme, honey, lemon juice and broth and bring to a boil. Then reduce heat, season with salt and pepper to taste. Simmer for 4-5 minutes.
If you plan to serve over couscous, prepare while the chickpeas cook according to the directions on the package.
Before serving, adjust seasonings as needed. Remove the thyme sprigs if using fresh and stir in the parsley.
