This chocolate marshmallow dessert is spectacular! Simple to make, few ingredients, tastes divine and looks great on a dessert platter! And no baking required – Try it for your next party!
Makes 34 to 36 slices
- 1 stick (1/2 cup) butter
- 2 cups package semisweet chocolate chips
- 1 teaspoon vanilla extract
- 2 cups coarse chopped walnuts or pecans (or 1 cup of each)
- 6 cups white or multi-colored miniature marshmallows (multi-colored marshmallows create a stained glass effect, but white looks pretty too!)
After cooling, add 1/2 the walnuts or pecans to mixture and stir.
Add the marshmallows. (NOTE: You do not want the marshmallows to melt) and gently mix.
Refrigerate for about a half hour to set, then remove from the refrigerator and carefully open the foil. Add the remaining nuts to the same pieces of tin foil in which you covered the logs and roll the chocolate logs in them. (NOTE: some people like to mix the two types of nuts together for both adding to the recipe and rolling the logs, others use the walnuts inside, then roll the log in the pecans…your choice!)
When the roll is covered with nuts, wrap up the logs tightly again in foil and return to the refrigerator for 24 hours to set.
After 24 hours, slice the roll into 1/4 inch slices and store in a tight container in the fridge. ENJOY!
