Springtime in a Bowl Pasta Salad With Cherry Tomatoes

springtime in a bowl
This pasta salad is my favorite to make once the weather starts getting nice! With just a few ingredients, this recipe is simple, delicious and cost effective. Perfect to bring to a pot-luck!  Easily doubled or tripled!
4 servings

INGREDIENTS

1 lb. orecchiette (some people call this type of pasta “shells”)
1/4 c. extra virgin olive oil
1 – 2 tbsp. balsamic vinegar (depending on the flavor you like)
kosher salt
Freshly ground black pepper
clove garlic, minced
1 pint. cherry tomatoes, halved
Fresh basil, torn, for garnish

DIRECTIONS

Cook pasta according to the package directions until al dente. Drain, then set aside.

Wisk together olive oil and balsamic vinegar in a serving bowl.

Season oil and vinegar mixture with salt and pepper.

Add pasta, garlic and tomatoes to dressing and toss.

Garnish with fresh basil.

Serve and enjoy!

TIP – This recipe is fun with bowtie pasta too!
