Easy, fresh and healthy – not to mention tasty! I love this cauliflower recipe!
INGREDIENTS
1 head cauliflower (I don’t recommend frozen)
1/4 cup olive oil (I generally use extra virgin olive oil)
3-5 cloves garlic, chopped (amount depends on how garlicky you like your food – I use 5!)
Sea salt
Black pepper (freshly ground is best!)
2 teaspoons chopped thyme leaves
OPTIONAL: finely grated parmesan cheese
DIRECTIONS
Preheat oven to 450 degrees (425 if using a convection oven)
Trim the cauliflower and break into pieces. Cut the larger florets into pieces.
Place all cauliflower pieces on a cookie sheet (preferably one with a rim) and toss with the olive oil, garlic and pepper.
Sprinkle with salt, pepper and thyme to taste, then toss again.
Roast in the oven until tender, approximately 15-20 minutes (Test with a fork)
Serve and enjoy!
Optional: Sprinkle with parmesan cheese and gently stir. If adding the cheese roast for 15 minutes only before adding, then 5 minutes more to melt the cheese.
