Fancy Tomato and Artichoke Side Dish With Walnuts

Love this easy, healthy and unique side dish of tomatoes and artichokes with walnuts!


1/2 cup walnuts, coursely chopped

2 Tbsp grated parmesan cheese

1/2 tsp salt

1/8 tsp pepper

2 Tbsp olive oil

1 14-oz can artichoke halves, drained, washed and cut into halves

1 pint cherry tomatoes

1/4 cup fresh parsley, chopped


Combine oil, walnuts, cheese, salt and pepper in 10-inch skillet. Cook over medium heat until nuts are coated and a golden brown color (about 5 minutes). Add tomatoes and artichokes.  Cook, stirring constantly, just until vegetables are hot (about 3 minutes). Stir in parsley.
