TURKEY APPLE SALAD

Ingredients:
2 cups cooked turkey or chicken, cubed
1 sweet apple, cubed
1/2 cup celery, chopped
1/2 cup mayonnaise  (we use light mayo to save calories)

Transforming, reusing and economizing to provide plenty—these are the principles behind Real Food on a Budget developed during 30 years of kitchen management by Mom of 7, Lana McAra. She reveals her secret formula for creating 4 nourishing meals from a single chicken, 3 meals from one beef roast and 107 ways to use ground beef—including Mock Filet Mignon and Mock T-Bone Steak—as well as dozens of substitutions.

Her unique “meat extender” technique adds complete plant-based protein to a dish to reduce the amount of meat for cost savings as well as health benefits.

Lana uses real food to keep her large family well fed on a tight budget. Her quick-to-make flavor packets and sauces eliminate food additives at a fraction of the cost of store brands. She also gives tips for disguising leftovers to add “free meals” to your menu. This is an info-dense resource you will use for years to come.
