It’s easy and refreshing – and the unique flavors blend together for a great tasting salad that you can prepare in 10 minutes! Beautiful to look at too! All you need for this recipe is cubed watermelon (or balled watermelon for a fancier presentation), chunks of cucumbers, crumbled feta cheese and fresh mint leaves. A simple lime dressing ties all the flavors together for a refreshing and delicious salad. It tastes good without the dressing, but I like the unique flavor it adds, so I usually include it. Watermelon Cucumber Salad INGREDIENTS 3 cups watermelon, cubed or balled 1 1/2 cups cucumber cut into chunks (remove the seeds if you like) 1/2 bag romaine lettuce 2 tablespoons small mint leaves (and more for garnish) 1/2 cup feta cheese crumbled 3 tablespoons olive oil 1 tablespoon lime juice salt and pepper to taste INSTRUCTIONS Combine the watermelon, cucumber and romaine lettuce in a large bowl (not too much romaine…) In a small bowl, whisk together the olive oil, lime juice and salt and pepper. Drizzle the dressing over the salad and toss to coat. Add the crumbled feta and mint leaves just before serving. Serve and enjoy! Note: Mint leaves can turn brown, especially if cut, which is why I recommend waiting until you serve to add them. Also, it is tempting to purchase already crumbled feta cheese at the store, but it really does taste better when you buy a hunk and crumble it yourself. Let us know if you try it!
