Two Minute Chocolate Mouse

Ingredients
  

  • 6 oz semi-sweet chocolate chips
  • 2 eggs
  • 3 tbsp kahlua (you can use chocolate liqueur if you don't have kahlua)
  • 3/4 cup milk scalded
  • OPTIONAL: whipped cream (slightly sweetened) 

Instructions
 

  • Set aside 1 tbsp chocolate chips for garnish.
  • Combine the remaining chocolate chips, eggs and kahlua (or chocolate liqueur) in a medium size bowl.. Blend 20 seconds just to break up eggs and chocolate chips.
  • Pour the scalded milk* into the mixture and blend for a full two minutes.
  • Pour the blended mixture into 4 small bowls or glasses and refrigerate until firm (I usually make the night before to simplify preparation the day of the meal, but an hour or so in the refrigerator is generally enough time to set.)
  • Top with whipped cream if desired and garnish with chocolate chips. (You can also add some strawberries for color!)
  • Serve and enjoy.

Notes

Tips:

I generally make this recipe in a free standing blender, but a bowl and hand blender works well too.
Sometimes I top each with a few raspberries or strawberries for a little extra color.
For an extra special presentation, add a Trader Joe's Petite Chocolate Baton to the chocolate mousse!
