Cauliflower Parm

Try this whole roasted cauliflower parm – it’s a low carbohydrate treat! Only 10 minutes of prep time. My husband and I love it!
6 Servings (as a side dish…if using as a main course as we do, it’s really more like 2 servings!)

INGREDIENTS

1/4 c. lemon juice
2 Tbs kosher salt
1 large head cauliflower, stem trimmed
1/4 c. extra-virgin olive oil
Pinch of red pepper

Pinch of oregano
Pinch freshly ground black pepper
2 1/2 c.of your favorite red sauce (make your own or use store bought marinara)
1 1/2 c. shredded mozzarella
1/4 cup parmesan cheese, shredded or grated
1/2 cup fresh basil leaves, chopped

DIRECTIONS

Preheat oven to 450°.

Combine 10 cups of water, lemon juice, and salt in a large pot and bring to a boil. 

Add the entire cauliflower head in one piece and bring back to a boil. Turn heat down to simmer for 10-12 minutes 

Test the cauliflower by inserting a knife into the center. If it goes in smoothly and easily, it is done.

Spread 1/2 cup red sauce on the bottom of a baking pan.

Take culiTransfer the cauliflower onto the baking pan on top of the sauce (shake off the excess water before putting in the pan)

Brush the olive oil on the cauliflower.

Season with spices

Roast in preheated 450 degree oven for 20-25 minutes until a nice golden color. It’s a good idea to rotate the baking pan after 10-15 minutes.

Top the cauliflower with remaining sauce, mozzarella and parmesan cheese

Broil 2-3 minutes until the cheese melts.

Remove the cauliflower from the oven and sprinkle with the fresh chopped basil leaves before serving.
