I am obsessed with peanut butter cups – and this recipe from my mom is really good and incredibly simple!
serves 6
INGREDIENTS
3 tablespoons powdered sugar, sifted
½ cup creamy or chunky peanut butter – whichever you prefer (we vary which we use from time to time – both are good)
1 cup chocolate, melted (we like dark chocolate for this recipe, but milk chocolate is great too)
DIRECTIONS
Place 6 liners in a cupcake tin.
Mix the peanut butter with the powdered sugar, stirring until smooth.
Spread 1 to 2 tablespoons of chocolate in the bottom of each cupcake liner.
Next, add 1 to 2 teaspoons of the peanut butter mixture on top of the chocolate.
Cover the peanut butter layer with more chocolate and smooth out the top.
Refrigerate for 1 hour (until chocolate hardens)
Remove peanut butter cups from the liners and enjoy!
Note: Substitute coconut oil for powdered sugar for a healthier version if you like – still delicious, but not quite as good as when made with powdered sugar.
