Fabulous easy recipe with 6 ingredients! This great vegetarian shitake mushroom jerky is easy, delicious and when packaged, shelf-stable for 3 months!
Contains 6g or protein – 100% plant based! Makes 13 1.25 ounce servings.
Ingredients:
1 pound shiitake mushroom stems (no caps, only the stem)
2 tablespoons salt
½ cup of soy sauce (use gluten free soy sauce if you prefer)
3 tablespoons olive oil
1½ tablespoons of cane sugar
1 teaspoon of five spice powder
Directions
1) Soak the stems in water overnight (to soften and remove bitterness).
2) Remove the stems and use your fingers to squeeze out excess water content
3) Flatten the stems
4) Place all the ingredients in a frying pan and set to medium heat, stirring occasionally until the stems absorb all the sauce
5) Place mushrooms (single layer) on foiled cookie sheet and place in oven for 30 minutes at 200F.
6) Enjoy!
