We love this recipe for parmesan tomatoes! Healthy and easy, it works well for either a side dish or a snack! With few ingredients, it’s easy to throw together quickly. These parmesan tomatoes stay 3-5 days covered tightly in the refrigerator and you can easily reheat them in the microwave. Or, just eat them cold – I actually prefer them that way. My two favorite ingredients, cheese and tomatoes, need not be warm to taste good!

Easy Parmesan Tomato Recipe
Ingredients
- 2-3 large beefsteak tomatoes Make sure they are firm!
- 1 cup shredded or shaved parmesan cheese (depending on the texture you like)
- 1 tbsp fresh chopped or dried basil I prefer to use fresh, and often use extra for garnish
- 1 tbsp fresh chopped or dried oregano I prefer fresh if you have some
- 2 tbsp fresh chopped or dried Italian parsley And again, I prefer fresh if available!
Instructions
- Slice tomatoes into 1/4″ slices. Arrange on the baking sheet.
- Top each slice with parmesan, enough to cover the top, then a sprinkling of basil, oregano and parsley
- Preheat oven to 400 degrees F and spray baking sheet with cooking spray.
- Bake for 10 minutes, until the cheese is melted and bubbly. You can broil them for an additional minute if you want the cheese to have more color.
- Transfer to a serving plate and garnish with basil
- Serve and enjoy!

HOW TO CHOOSE THE BEST BEEFSTEAK TOMATO:
I love beefsteak tomatoes, but they require a bit more work before purchasing than other types of tomatoes to ensure you get the high quality ones. Make sure you inspect each and every tomato for signs of ripeness, disease and over-handling before buying. That’s if you buy your beefsteak tomatoes in the store or farmers market. If you grow them yourself, the tomatoes likely don’t need this type of careful inspection. A ripe beefsteak has vibrant colors, but retains a firm texture. Check the tomatoes for cracks in the skin or a bruised appearance. You also want to make sure there are no mold spots. Overripe or damaged tomatoes just don’t taste as good.
